Last week, my husband’s students had a program for all the 5th graders in his district. As I was playing on Pinterest to pass the time until the program began, the guy behind me said, “I don’t want to offend you, but you don’t look like you are old enough to have a 5th grader so are you here watching a family member?” Sir you definitely didn’t offend me. You actually just made my day! You can be my new best friend! I love when I am told I look young, because I really don’t feel old, but I’m not 19 either. So it is good to still be taken as young, which reminds me of when I was just a kid. One of the things I remember about growing up are these oatmeal fudge bars. They taste like my childhood. They are just one of those solid yummy recipes from life as a child.

You know what I mean, it is pretty much the same thing as comfort food. Now my husband and I both love them. Not the best for trying to eat healthy but when you want a chocolate treat, these bars are top notch!

The worst part about these cookies growing up was having to wait for them to cool enough to cut. I remember coming in and asking my mom if they were ready yet. She would feel the bottom of the pan and tell me it would still be a little longer. This may have happened every five minutes for an hour.

Despite the waiting for the oatmeal cookie bars to cool, they are so worth it! The fudge layer just melts in your mouth. Yum!

Oatmeal Fudge Bars

A delicious chocolate bar cookie.
Prep Time20 minutes
Cook Time20 minutes
Total Time40 minutes
Servings: 20

Ingredients

Dough

  • 1 stick of margarine or butter
  • 2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oats

Chocolate Filling

  • 12 oz. package of chocolate chips
  • 1 can sweetened condensed milk
  • 2 tablespoons margarine or butter
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla

Instructions

  • Mix dough ingredients together.
  • Press in bottom of greased cookie sheet, reserving about 2 coups of dough for topping.
  • Mix chocolate filling ingredients in a saucepan on low heat until chocolate chips are melted.
  • Spread chocolate filling on top of dough in cookie sheet.
  • Sprinkle reserved dough on top of filling.
  • Bake for 15 to 20 minutes at 350.
  • Allow to cool completely before cutting.
