Apple Oatmeal Breakfast Cookies
Sometimes cookies are the best for breakfast! Am I right? I now it sounds wrong, but so right if you love things like pastries, donuts, or anything sweet. I don’t know why I have such a breakfast sweet tooth, but every morning when I wake up, nothing but sweet things sound good. Eggs, no way! So I decided to try these oatmeal apple breakfast cookies to try and add some fruit and oatmeal to go along with the chocolate chips. Of course they have applesauce in them (everything this week is about apples, like Apple Cinnamon Streusel Muffins and Apple Crisp).
Oatmeal, applesauce, chocolate chips or raisins combine with some yummy spices to make these a great on-the-go breakfast option too. Perfect to send with the kids or family as they run out the front door.
Do you have other great suggestions for healthy ways to satisfy a breakfast sweet tooth? I might need them because I probably shouldn’t eat cookies for breakfast every morning. Or maybe I’ll just have to try other kinds of breakfast cookies.
Oatmeal Apple Breakfast Cookies
Ingredients
- 1 cup sugar
- 1/2 cup shortening
- 1 egg
- 1 cup applesauce
- 1 teaspoon baking soda
- 1 3/4 cup flour
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup quick oats
- 1 cup chocolate chips raisins or a combination of both
Instructions
- Cream sugar, shortening, and eggs until smooth.
- Add soda to applesauce and then to sugar mixture.
- Add flour, spices, oatmeal and chocolate chips.
- Bak on a greased cookies sheet at 425 Degrees F for 8 to 10 minutes.
