How to Make Butterbeer Cheesecake

Here are the simple steps to make this delicious butterbeer recipe inspired by the Harry Potter Books and the Harry Potter area of Universal Studios. You will need an 8-inch springform cake pan to make this recipe.

1. Prepare the Crust:

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, combine 2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted butter.
  • Press the crust mixture evenly into the bottom of an 8-inch springform pan.

2. Make the Cake Batter Filling:

  • In a large bowl, beat 4 packages (32 oz.) of softened cream cheese until smooth using an electric mixer.
  • Add 1/2 cup of sour cream and continue beating with hand mixer until well combined on medium speed. Feel free to use the bowl of a stand mixer in place of the electric mixer.
  • Gradually add 2 cups of granulated sugar while beating, ensuring it’s fully incorporated.
  • Beat in 3 large eggs, one at a time, making sure each egg is fully mixed in before adding the next and scraping down sides of the bowl.
  • Stir in 1/2 tablespoon of vanilla extract and 1/2 tablespoon of butter flavoring until the mixture is smooth and creamy.
  • Add 1/2 cup of butterscotch sauce and 1/2 cup of butterscotch chips, stirring until well blended.

3. Assemble the Cheesecake:

  • Pour the creamy cheesecake filling mixture over the top of the crust in the springform pan.
  • Smooth out the top of the cake with a spatula to ensure it’s even.

4. Bake the Cheesecake:

  • Place the cheesecake in the preheated oven, with a pan of water placed on the rack below, and bake for 60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to cool gradually.
  • Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to allow it to set completely.

5. Add the Topping:

  • When ready to serve, top with Cool Whip. You can pipe swirls around the edge and fill the center with a heaping mound of Cool Whip for a pretty fluffy whipped-cream top.
  • Drizzle butterscotch sauce over the top for a finishing touch.

Springform Pan Removal Tips:

I know that springform pans can be a little bit intimidating, here are some tips for easy removal:

  • Chill Before Unmolding: After baking, allow the cheesecake to cool completely in the refrigerator before attempting to remove it from the springform pan. This will help firm up the cheesecake and prevent it from sticking to the sides of the pan.
  • Use a Thin Blade: Before unlatching the sides of the springform pan, run a thin blade or offset spatula around the edge of the cheesecake to loosen it from the pan. This will help ensure a clean and smooth release without damaging the edges of the cheesecake.

3 stars because the filling was good. If you use all the filling this states to make then it will over flow while cooking. It would have been better to use a 9 inch. I recommend folding the butterscotch chips in to the filling since they will stay at the bottom of the mix if using a kitchenaid mixer.
