Frozen Chocolate Covered Raspberries
Looking for a fun twist on homemade Valentine’s Day candy? These frozen chocolate covered raspberries are delicious and simple to make. An impressive gift giving combo.
Do you ever find something you love, try it once maybe twice and then the item is discontinued, or you can’t find it anymore? That was these raspberries for my mom. She found these delicious frozen chocolate covered raspberries at Costco one day. They were on sample, she tried them and loved them, bought some. But every time she has gone back, they haven’t been available.
She has asked every time she’s been back to the store and nothing, so we decided to remedy the problem and make our own, because I will attest that they were delicious. I’ve never been a big strawberry fan (don’t hate me), so I’ve never really been into chocolate covered strawberries, but raspberries is something I could get behind.
And since Christmas, I’ve been loving dipping things in chocolate, like Oreo’s, molasses cookies, these and more! I don’t know why, but I find it so soothing. And I have to say that I love this Wilton Chocolate Melting Pot (affiliate link). It makes it so easy, just add the melting wafers, stir occasionally until melted, then turn off so the chocolate doesn’t get too hot or burn.
How to make frozen chocolate covered raspberries
You will need:
- Raspberries (fresh or frozen)
- milk chocolate melting wafers
- white chocolate melting wafers
Steps:
- If using fresh raspberries wash, dry and freeze on a cookie sheet.
- When raspberries are frozen (or if starting with frozen raspberries) melt 1 to 2 cups of white chocolate melting wafers. Use the melting pot, or in a microwave safe bowl. If using the microwave, cook for 30 seconds and stir, repeat until a nice smooth consistency is achieved.
- Dip raspberries in white chocolate then move to a sheet of wax or parchment paper to set up.
- Move raspberries to the refrigerator for 30 minutes.
- Using the same melting method, melt 1 to 2 cups of milk chocolate melting wafers.
- Dip raspberries in milk chocolate then move to a sheet of wax or parchment paper to set up. Can sprinkle with sprinkles right after dipped in the chocolate if desired.
- Freeze for at least and hour, then serve frozen. Allow raspberries to sit out for a couple minutes before eating.
Chocolate Dipping Tips
- I like using the melting pot (mentioned above), because it makes the whole process easier in my opinion.
- Drop in the item to be covered in chocolate and then use a spoon to cover the item in chocolate. Slide a fork underneath the item and allow excess chocolate to drip off.
- If needed use another fork to help slide the item off of the first fork onto wax or parchment paper to set up. Now is the time to add sprinkles if wanted.
- Stir the wafers/melted chocolate occasionally while dipping.
- Do not overheat chocolate. this can cause the chocolate to have a grainy texture or look not as pretty when setting up. If using a microwave, melt just until there are no longer lumps. Stirring really well will help melt remaining bits of chocolate. If using a melting pot, turn the temperature down or off after the wafers have melted and stir occasionally.
