How to Make the Viral Taco Cottage Cheese Bowl
Prepare Sweet Potatoes
Clean and peel sweet potatoes. I like to cut in half lengthwise. Next, cut each of those halves in half lengthwise twice. Then flip to the other way and cut the slices into cubes. I decided I didn’t cut mine small enough because they were longer on the roasting time. If I were you, I’d cut mine a little smaller than pictured.
Place cubes a medium bowl, mist with olive oil and season sweet potatoes (I love my Olive Oil Mister). I like to add salt, pepper, and a little bit of cinnamon. Feel free to get creative with your spices here. I like the cinnamon because it brings out the sweetness a little bit!
Bake at 425 Degrees F for 25-30 minutes on a lined sheet pan. Stirring halfway through roasting time.







Make Taco Meat
While sweet potatoes are roasting, brown ground beef over medium heat. Break up the meat, and stir occasionally as the meat cooks. When the meat is browned, drain off grease/fat.
Add taco seasoning and water as per directions on the taco seasoning package. Simmer for 5-10 minutes to let flavors meld.
If taco meat is ready before roasted sweet potatoes, cover and keep warm on low. Stirring occasionally until sweet potatoes are ready.

Cut Avocados
Prepare avocados. Cut in half. Remove pit/seed. Slice lengthwise but not through the peel, and then again in the other direction to form cubes. I use a spoon to scoop out the avocado.
Slip the spoon between the avocado peel and the avocado and simply scoop out as much as you like to add to your plate.
Plating
Add 1/4 of ground beef to plate (about 1/2 cup), 1/2 cup cottage cheese, 1/4 of sweet potatoes, and as much avocado as you like (I usually use 1/4 to 1/2 of a chunked avocado).

Drizzle with hot honey and top with any other seasonings or toppings such as red pepper flakes, tomatoes, green onions, diced jalapeños, etc. Make it your own and to your taste.

My husband seasoned his with red pepper flakes for some extra kick. I went for a little bit of Everything but the Bagel seasoning.

Taco Meat: However you like to make your taco meat, you can make it that way for this recipe. Don’t feel like you have to follow this recipe exactly there is lots of room for making it your own. Some like to add a couple tablespoons of tomato paste to their taco meat or make their own special blend of taco seasonings.
Toppings: Get creative with toppings. You can add a lot of volume by adding more vegetables. Think lettuce, tomatoes, cauliflower rice, peppers, onions, etc.
