Apple Blondies

Ingredients

For the blondies -

  • ¾ c unsalted butter
  • ¾ c apple butter
  • 1 ½ c brown sugar divided
  • 2 eggs
  • 1 T vanilla
  • 2 ½ c flour
  • 1 t baking powder
  • 2 t cinnamon divided
  • ¼ t nutmeg
  • ½ t salt
  • 2 medium apples diced (Honeycrisp, Granny Smith or Gala recommended)

For the glaze -

  • 3 T unsalted butter
  • 3 T maple syrup
  • 1 c powdered sugar
  • ½ t cinnamon
  • ¼ t salt

Instructions

  • Preheat the oven to 350 degrees. Spray or line a 13x9 baking dish and set aside.
  • In a medium saucepan, heat the butter over medium heat until melted and beginning to brown. Allow to cool for about 10 minutes.
  • Add in the apple butter and 1 cup of the brown sugar. Stir well.
  • Add in the eggs and vanilla and mix again.
  • Finally, add in the flour, baking powder, 1 teaspoon of the cinnamon, nutmeg and salt. Stir just until combined.
  • Spread the batter into the prepared baking dish.
  • In a small bowl, combine the diced apples, the remaining brown sugar and remaining cinnamon. Toss to coat.
  • Sprinkle the apples over the batter evenly.
  • Bake in the preheated oven for approximately 30 minutes or until the center is set and the edges are just starting to brown. Allow to cool.
  • To make the glaze - in a small saucepan, heat the butter over medium heat until it melts and then begins to brown.
  • Add in the maple syrup, powdered sugar, cinnamon and salt. Whisk well.
  • Drizzle the glaze over the baked blondies. Allow to set.

Notes

Storage: Blondies can be stored in an airtight container in the fridge for up to 2 days.
