Apple Blondies

For the blondies -

unsalted butter

brown sugar

medium apples
diced (Honeycrisp, Granny Smith or Gala recommended)
For the glaze -

unsalted butter

T
maple syrup

powdered sugar

cinnamon
¼

Instructions
Preheat the oven to 350 degrees. Spray or line a 13x9 baking dish and set aside.
In a medium saucepan, heat the butter over medium heat until melted and beginning to brown. Allow to cool for about 10 minutes.
Add in the apple butter and 1 cup of the brown sugar. Stir well.
Add in the eggs and vanilla and mix again.
Finally, add in the flour, baking powder, 1 teaspoon of the cinnamon, nutmeg and salt. Stir just until combined.
Spread the batter into the prepared baking dish.
In a small bowl, combine the diced apples, the remaining brown sugar and remaining cinnamon. Toss to coat.
Sprinkle the apples over the batter evenly.
Bake in the preheated oven for approximately 30 minutes or until the center is set and the edges are just starting to brown. Allow to cool.
To make the glaze - in a small saucepan, heat the butter over medium heat until it melts and then begins to brown.
Add in the maple syrup, powdered sugar, cinnamon and salt. Whisk well.
Drizzle the glaze over the baked blondies. Allow to set.

Storage: Blondies can be stored in an airtight container in the fridge for up to 2 days.
