medium sized apples - preferably Honeycrisp
Granny Smith or Gala (or a mix)

brown sugar

vanilla or vanilla bean paste
Instructions
Dice the apples into ½ or smaller pieces. Peeling is optional.
Place the apples into the bottom of a slow cooker.
In a medium bowl, combine the brown sugar, sugar, cinnamon, salt, cloves and vanilla. Whisk to combine.
Pour the sugar mixture over the apples and toss to combine.
Cover with the lid and heat over low for 10-12 hours. Stir occasionally.
Apples should be tender. Transfer the apples and juices to a blender (in batches if needed) and blend until smooth.
Divide between storage containers and store in the fridge.
Notes
Storage: Apple butter that is not properly canned in canning jars should be stored in the fridge for up to 2 weeks.
