Preheat oven to 350 degrees and line two cookie sheets with silicone baking mat
Using a small pot, add the butter and place into the pot.
Place the pot over medium heat and whisk occasionally.
Once the butter has melted, it will begin to get little brown specs.
Remove the butter from the stove top, set to the side, and allow to cool for about 10 minutes In a medium sized bowl, add the flour, baking soda, and salt, whisk to combine.
Using a standing mixer with a paddle attachment, add the sugar, light brown sugar, and browned butter.
Mix on medium speed until fully combined, light and fluffy.
Add in the egg and vanilla and mix until combined
Add the flour mixture into the butter mixture and continue to mix on medium speed, until a soft dough has formed
Add in 1 cup of halloween sprinkles into the cookie dough and carefully mix the sprinkles into the dough on low speed.
Using the cookie scoop, scoop approx 3 oz of dough into your hands and roll into a ball
Place the rest of the sprinkles into a small bowl.
Take the cookie dough ball and roll into the sprinkles.
Place the dough ball onto the cookie sheet and lightly press down into a thick disk
Bake in the oven for 13-15 minutes or until firm around the edges but soft in the center. Remove from the oven and allow to cool.
