Cake:
- 2 cups sugar
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 ½ cup oil
- 4 eggs beaten
- 3 cups raw grated carrots
Frosting:
- 8 oz cream cheese softened
- 1 stick of butter softened
- 3 cups powdered sugar
- 2 teaspoons vanilla
- Handful of chopped walnuts optional
- Candy eggs optional
Cake Directions:
Mix together dry ingredients until well combined in a large mixing bowl with a whisk.
Add remaining ingredients and mix all together by hand.
Bake at 350 Degrees in a greased 9x13 inch pan for 30 minutes.
Let cool before frosting.
Frosting Directions:
Add ingredients in a bowl and mix with an electric hand mixer until smooth.
Add walnuts if using and mix with a spoon.
Top cooled cake with frosting.
Add candy eggs for decoration if desired.
