Cherry Pie Cookies

Ingredients

unsalted butter
softened

white chocolate chips
Instructions
Preheat the oven to 325 degrees. Line your baking sheet(s) with parchment and set aside.
In the bowl of a stand mixer, combine the butter, vanilla and powdered sugar. Mix until smooth.
Add in the flour and mix to combine, scraping the sides often.
Scoop out about a tablespoon’s worth of the dough and shape into a ball. Gently indent the center to create a well.
Fill the well in each cookie with a heaping spoonful of the pie filling, spreading to the edges if needed.
Bake in the preheated oven for 12-15 minutes or until the cookie is set.
Allow to cool.
In a small bowl, melt the white chocolate chips in the microwave, heating for 15-30 seconds at a time and stirring until smooth.
Transfer the melted white chocolate to a piping bag or a small ziploc bag. Drizzle the white chocolate over the cookies. Allow to set.
Notes
Storage: Cookies can be stored in an airtight container in the fridge for up to 3 days.
