Mini Lemon Tarts

Ingredients

  • 36 individual pre-made tart crusts

For the filling

  • ½ c lemon juice
  • 1 T lemon zest
  • 1 c sugar
  • 3 eggs
  • c sour cream
  • Additional lemon zest to garnish

Instructions

  • Preheat the oven to 375 degrees. Line a baking sheet with parchment and line out the pre-made tart shells.
  • In a medium bowl, combine the lemon juice, zest, sugar, eggs and sour cream. Mix until combined.
  • Transfer the filling to a measuring cup with a pour spout (or similar) and carefully fill each tart shell just below the top edge.
  • Bake in the preheated oven for 20-24 minutes or until the filling is set.
  • Allow to cool.
  • Top with additional lemon zest to garnish.

Notes

Storage: Tarts can be stored in an airtight container in the fridge for up to 3 days.
