Mini Lemon Tarts

individual pre-made tart crusts
For the filling

lemon juice

lemon zest

sugar

sour cream
Additional lemon zest to garnish
Instructions
Preheat the oven to 375 degrees. Line a baking sheet with parchment and line out the pre-made tart shells.
In a medium bowl, combine the lemon juice, zest, sugar, eggs and sour cream. Mix until combined.
Transfer the filling to a measuring cup with a pour spout (or similar) and carefully fill each tart shell just below the top edge.
Bake in the preheated oven for 20-24 minutes or until the filling is set.
Allow to cool.
Top with additional lemon zest to garnish.
Notes
Storage: Tarts can be stored in an airtight container in the fridge for up to 3 days.
