Bourbon Butter Pecan Pie Recipe

Ingredients

For the crust

  • 2 ½ c flour
  • 1 c unsalted butter
  • 1 t salt
  • 1 t sugar
  • ⅓-½ c water

For the pie filling

  • ¼ c unsalted butter
  • 1 c sugar
  • 1 c corn syrup
  • 3 eggs
  • ¼ c bourbon
  • 1 t vanilla
  • Dash of salt
  • 1 ½ c pecan halves

Instructions

  • Preheat the oven to 325 degrees.

For the Crust

  • In the bowl of a stand mixer, combine the flour, unsalted butter, salt, and sugar. Using the paddle attachment, mix on low for 2-3 minutes or until crumbly and the butter is coarsely mixed throughout.

  • Add in the water, small splashes at a time, and mix just until incorporated.

  • Press the crust into the bottom and sides of a 9.5 inch pie dish. Freeze while you make the filling.

For the Filling

  • In a small sauce pan, combine the butter, sugar and corn syrup. Heat over medium and bring to a boil for about 3-5 minutes or until the sugar is dissolved. Allow to cool slightly.

  • Meanwhile, in a medium bowl combine the eggs, bourbon, vanilla and salt. Whisk to combine.

  • Slowly pour the corn syrup mixture into the egg mixture while constantly whisking. Mix well.

  • Add in the pecans and mix to combine.
  • Pour the pie filling into the pie crust.

  • Bake in the preheated oven for 55-60 minutes or until the center is set but still slightly jiggly when tapped. Allow to cool to room temperature before placing in the fridge until ready to serve.

Notes

Storage: Pie should be covered and stored in the fridge for up to 3 days.
