Roasted Parmesan Carrots

- 2 lbs carrots cut into sticks
- 1 ½ cup shredded parmesan
- 3 TBS avocado oil
- 3 TBS minced garlic
- 1 cup grated parmesan
Preheat your oven to 425 F.
Mix sliced carrots, 2 TBS of avocado oil, shredded parmesan, and garlic.
Use 1 TBS oil to brush across the baking sheet and sprinkle your grated parmesan on top of the oil.
Place carrots cut side down on to the parmesan coated baking sheet.
Roast for 20-25 minutes.
Dip in ranch or your favorite dip and enjoy!
Be sure to reheat in the air fryer if possible to keep the crisp.
