Viral Taco Cottage Cheese Sweet Potato Bowl

My version of the viral Tik Tok Cottage Cheese, taco meat, and sweet potato bowl. A great recipe full of protein, fiber, and healthy fats

Ingredients

  • 1 Pound Ground Beef
  • 2 Cups Cottage Cheese
  • 2 sweet potatoes about 1 pound
  • 1-2 Avocados
  • 4 Tablespoons Hot Honey
  • Olive Oil
  • Taco Seasoning Packet
  • Additional Seasonings to Taste Salt, Pepper, Cinnamon, Paprika, Red Pepper Flakes, etc.

Instructions

  • Clean, peel, and dice sweet potatoes into cubes. Cut each one in half lengthwise, turn over, and cut slices, and then cut going the other direction to form cubes.

  • Mist with olive oil and season sweet potato cubes. I like to add salt, pepper, and a little bit of cinnamon. Feel free to use whatever spices you prefer here.

  • Bake at 425 Degrees F for 30-45 minutes on a lined sheet pan. Stirring halfway through roasting time.

  • While sweet potatoes are roasting, brown ground beef over medium heat breaking up and stirring as the beef cooks. After the meat has browned, drain off grease.

  • Add taco seasoning and water as per directions on the package. You can also mix up your own seasonings here if you prefer. Simmer for 5-10 minutes.
  • Prepare avocados. Cut in half. Remove seed. Slice lengthwise but not through the peel, and then again in the other direction to from cubes. Scoop out with a spoon.
  • Add 1/4 of ground beef to plate, 1/2 cup cottage cheese, 1/4 of sweet potatoes, and as much avocado as you like (I usually use 1/4 to 1/2 of an avocado).

  • Drizzle with hot honey and top with any other seasonings or toppings such as red pepper flakes, tomatoes, green onions, diced jalapenos, etc.

Notes

Storage: Store leftovers in an airtight container in the refrigerator or up to three days. Note that extra avocado can turn brown. Add some lemon or lime juice to preserve green color.
Roasting Time will vary depending on the size of cubes. Smaller cubes will roast quicker than larger cubes. Use a fork to test doneness. You will want soft, easy to pierce potato cubes.
